Easy crock pot recipe to warm ya up this fall.

My friend, Val, shared this recipe with me a few months ago and it's become one of my faves... I buy all of the ingredient at Costco so I know I'm saving by buying in bulk and I always have the ingredients on-hand for a ridiculously easy meal!

Fajita Salsa Chicken
3-4 boneless skinless chicken breasts
2 cups Salsa (I use the Organic Kirkland brand from Costco)
1/4 cup taco seasoning (the large McCormick Taco Seasoning is a steal at Costco, considering the individual packets you get at the store can cost $1+ a piece. The large bottle lasts me FOREVER- like a year! And I make a lot of tacos!)

Pour half of the salsa in the bottom of the crock pot
Lay chicken on top of salsa.
Pour seasoning on chicken.
Pour remaining salsa over the chicken.
Cook on low 6-7 hours or until chicken is cooked through.

The meat will be super tender- I shred it really quickly and serve with whole wheat tortillas and traditional taco/fajita fixings (cheese, lettuce, onion, sour cream, etc....).

  1. I make this same exact recipe and it is SO yummy! The only thing I do different is that after I take the chicken out of the slow cooker I add 1/4 cup low fat sour cream to the salsa in the bottom of the pot. I boil some noodles and lay the chicken over the noodles. Then spoon the salsa/sour cream sauce (which is so nice and creamy) over the chicken. YUMO!

  3. No, I thought about that. BUT, you could take out E's portion and then add the sour cream for you and B.

  6. I make something similiar for the boys. Like Daniella, I add sour cream, except I use an entire 16 oz. container. lol. I also add a can of corn and a can of black beans. I serve it over white rice.

  7. S- LOL!!! I would totally add a whole container too!! I have never done the Sour Cream but it sounds so yummy, granted, I DO top each of my fajita/taco with about 3 tbsp of sour cream, so it's probably the same effect. Love the idea of adding in corn and black beans too. I have a whole new version to try next time!
